The Elm Oyster (Hypsizygus mushroom) is often found high up on dead branches of trees, specifically on Maple or Elm trees. They are also sometimes seen on fallen branches, trunks and stumps. They vary from 5 to 15 cm and are often white or a beige colour. It is edible and is a good source of vitamins (in the B-complex) and are a surprisingly a very good source of protein.
